How do you Unlock(PS2 Evo Items)

Hey - that's the damn quest that I'm having trouble on too! And I think that it's the one you have to beat to get the bat wings!

I just can't do an evading throw escape... I went to tutorials too and I could do it... but in the aracade, I can't. Any tips on how to do this?

And also - what the hell is a gaurenteed hit move??
